Meal #1: Mindful Chef – Mushroom & Leek Porcini Risotto

The Verdict: 7/10 – Premium Price, Premium Organization

After being absolutely bombarded with advertisements (seriously, I’m either their exact target audience or they are desperate for sign-ups!), I finally caved and ordered Mindful Chef. At just under £50 for 3 meals (and that’s with a 25% discount!), it is by far the most expensive box I’ve tried. Let’s see if it’s worth the splurge.
The 63-Second Sort

Gousto took me 30 minutes just to sort the sauces and sachets. Mindful Chef took 1 minute and 3 seconds. Everything for each meal comes in its own designated brown bag. I didn't even have to clear a shelf in the fridge immediately because the bags are so self-contained. For a busy parent, that "mental load" reduction is almost worth the price alone.
The "Al Dente" Dilemma
We tried the Mushroom and Leek Porcini Risotto. I’d requested brown rice, but I was disappointed to see it was pre-cooked in a plastic pouch. While it keeps the cook time to 25 minutes, the texture was very al dente. I prefer my risotto creamier and less "crunchy," but the flavour was clean and savoury.
The Toddler Tactic
My daughter has developed a habit of refusing the meal-kit food on sight. Tonight, we stood our ground: "No alternatives."
The Result: She ended up eating the mushrooms with rice "sneakily" hidden underneath. Progress! I know she’d like it if she gave it a chance, and tonight she finally did.
The Scorecard

Organization: 10/10 (The brown bag system is genius).
Taste: 7/10 (Good, but watch the "bite" in the pre-cooked rice).
Kid-Friendly: 5/10 (No tears, but it took some negotiation).
Value: 4/10 (Nearly £50 for 3 meals is a lot to ask for most families).
